Ingredients
For the Alligator Meat:
- 1.5 lbs alligator meat
- 4 cups beef or chicken stock
- 1 bay leaf
- 1 tsp salt
For the Sauce:
- 2 tbsp olive oil
- 1 medium onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/4 tsp ground allspice
- 1/4 tsp crushed red pepper flakes (optional)
- 1 cup crushed tomatoes
- 1/2 cup tomato sauce
- 1/2 cup dry white wine
- 1/2 cup green olives, sliced
- 2 tbsp capers
- 1/4 cup chopped fresh cilantro (plus extra for garnish)
- Salt and pepper, to taste
For Serving:
- Cooked white rice
- Fried plantains (optional
Instructions
Cook the Alligator Meat:
- Place the alligator meat in a large pot with the stock, bay leaf, and salt. Bring to a boil, then reduce heat and simmer for 1.5-2 hours, or until the meat is tender and easily shredded.
- Remove the meat from the pot, let it cool slightly, and shred using two forks. Reserve 1 cup of the cooking liquid.
Prepare the Sauce:
- Heat olive oil in a large skillet over medium heat. Add the onions and bell peppers and sauté until softened, about 5-7 minutes.
